Your PS3 will work fine with a 720p TV. It will work even better with a 1080p TV, but you won't see much difference unless you want to use the PS3 as a Blu-Ray DVD player.
A 720p TV will convert all inputs (480i, 480p, and 1080i) to 720p. A 720p TV will not allow you to input a 1080p signal. If you want to watch BluRay movies using your PS3 then the PS3 hast to output 1080i instead of 1080p to a 720p TV.
A 1080p TV will convert all inputs to 1080p. That doesn't mean that the TV adds resolution to inputs that are a lower (480i, 480p, 720p, or 1080i) to begin with. It just means that the TV estimates what the missing resolution might have looked like and then adds that to the signal before the image is displayed.
With a 1080p TV your PS3 can output BluRay movies in 1080p.
