Help setting up 6.1

Hi everyone. Im a home theatre noob and I want to build my first real HT (upgrading from logitech z680 5.1 computer speakers). I plan on getting a refurbished Onkyo 603x receiver. I noticed it's a 7.1 receiver, but I don't have the right layout in my room to set up 7.1 properly. So I'm going with a 6.1 setup. So my question is can I set up 6.1 with this receiver? I'm not sure if I just hook up one speaker to the rear surround or what. Any help at all would be appreciated. I'm pretty set on getting this receiver, because I may have the urge to go to 7.1 later down the road. Unless there is a better 7.1 receiver I can get for around 250-300. I'm using Athena Audition speakers (2 f2.2's, 2 bi.2's, c1, r1). Thanks in advance for any help guys!

Yes, I'm not specifically familiar with your receiver, so it should state in the manual which output you hook up to for 6.1. you just need to make sure you set the settings properly so the receiver knows you are using a 6.1 array, not a 7.1 array. Again, this should be described in the manual.
Thanks Chris. I just downloaded the pdf of the manual and it says that I just need to hook up the speaker to the surround back LEFT and I'll be all set.
