Not sure if it's a massive issue, but are your HDMI cables v1.3 capable?
Kind of running out of ideas here....it looks as if it maybe a display issue. Do you have any other HD devise you could try at 1080p - HD DVD, another PS3, stand alone BR player...etc..?
