Danny,
Your computer's video aspect ratio doesn't have to match the aspect ratio of your screen (1.78:1). Most of us run 'strange' resolutions that scale best and then simply stretch/shrink the image to fit the screen with the projector's internal controls.
An example: Since the NTSC DVD native resolution is 720x480, many with better projectors (like yours) will choose to run at exactly x2 the rez to get better scaling. In other words, 1440x960. The screen aspect ratio is irrelevent if all you care about is is DVD playback.
Other popular rez's are 1280x720 or 1440x720 since 960p is a bit high for most projectors other then good 8" EM machines (like yours) or 9" EM machines.
1280x720 is a real 1.78:1 ratio so it has one added advantage: If you want your computer desktop to also not look squished or stretched, then you have to make the two aspect ratio's match.
I run at 1080x720 (1.5:1 ratio) on my HTPC since my projector can't really resolve more then 720 lines and 1280 or 1440 across was also too much for it to resolve correctly so I backed down to 1080. My screen's 1.78:1
