How to set levels for DVD-A and multi ch SACD???

Guys, I just picked up an Oppo 970 and am starting to buy a few DVD-A and SACD discs. Wondering the best way to accurately set trim levels for the 5.1 analog outs on the Oppo for such playback. These will be feeding the 5.1 ins on an EAD pre/pro which has no bass management, just a straight pass through. It won't be the same as the digital settings in the EAD via digital coax will it? How can I accurately do it other than by ear?? Most likely my matched LCR will be flat or most likely within +/- 1dB. It's the surrounds and sub that will need tweaking I'm guessing.

There is a Chesky disc for DVD-A, and a DMP disc for SACD. Might be others too.

Some people just use a disc like Avia, using the analog outs of their player. But this can hide any LFE issues. (Some players sub output is too low for DVD-A and/or SACD.)
Well I tried to use Video Essentials but I can't get the Dolby Digital decoding to work in the Oppo. As far as I can tell I have all settings correct in the Oppo but I don't get any center or surrounds. I can't imagine what I might have wrong in the setup menu???
