So I have the Samsung HT-Z510 home theatre system that I have recently tried hooking up to my Optoma HD65 projector. The problem I am having is that when I use component cables to the projector I get much better sound out of my speakers when compared to the HDMI cable, but the HDMI cable has much better picture quality. Anyone know why this could be?

You may have "HDMI Audio Output" turned on in the receiver's setup menu. This would force the source device (BluRay player, or whatever) to send only stereo audio to your receiver instead of surround sound, as few displays can handle a 5.1 or higher signal... They're usually stereo-only.

The HDMI should be connected from the input on your projector to an output on your receiver, then you should should have your sources (BluRay and/or HD cable box) connected to the HDMI inputs on your receiver. If you have this wired correctly and still have problems then you probably have a setting/preference issue in your receiver as RoboRay suggested.
