I love both theaters, and this is a tough call for Star Wars in particular, because of the history of Star Wars movies showing at the Chinese. That said, the big differences are these:
1) The Chinese is a new-IMAX-style 1.90:1 screen. It is quite large and very satisfying, but the AMC Universal is an old-fashioned IMAX with a truly gargantuan IMAX screen (several stories tall) with the over-square 1.43:1 aspect ratio. Now Star Wars will be Scope, so letterboxed in both venues, but the image will be much larger at Universal.
2) Both venues have IMAX 12 channel sound. Acoustics have *always* been challenging at the Chinese, and it will sound better at Universal. But, IMAX has done a good job at the Chinese and I think it sounds pretty good.
3) I've gotta say there is something pretty special about seeing Star Wars openings at the Chinese though, as that's been a prominent opening location going all the way back to the original in '77.
