My bonus room is 14' W x 24' L X 9' H and looking to see what the optimal screen size, ideal type of screen and best way to block the window. I'm planning on just having a sofa that is set back and a 7.1 sound system

You may need to let your room width drive your screen size. The sloped ceiling is going to somewhat limit your options. Your room is plenty deep. Go with the max 16:9 you can fit and then place your couch at a comfortable distance.

Due to the window, Is it recommended to create a false wall and adding a fixed screen to that or a drop down projector?

I would look at getting a 2.35 screen and using it in CIH mode as you appear to have more width than height. I wouldn't go with a drop down projector. A false wall with speaker behind it looks like a good idea. Nothing like sound coming directly from the screen. You have enough room to go with speaker wide vs rear surround. I have 7.1 in my HT and I may convert it to 5.1 with height speakers (I'm limited on width).
