I'm adding two in-ceiling speakers in my office.

The only thing they'll be for is listening to the radio/cd player

Nothing complicated like a home theater of 5.1 surround sound.

If I was using a single-speaker, I'd probably just put it in the middle of the room, but since I'm using two speakers (for Right + Left stereo sound) I'm not sure how to place them.

Do you place them close together? Far apart?

In a square room do you put them in the middle? On a side? In a corner?

If you place them far apart, do you put them in diagonal opposite corners, or the two corners on the same side of the room?

Thanks for any help, I've scoured the Internet to no avail, and I'm not savvy enough with audio to know the best and/or standard way to handle this.

I would put them evenly separated from your desk to get some amount of stereo or at least reasonable balance.
