recommendation of the TV carrier

which TV carrier would you recommend on this or a similar wooden construction?

I'd look for a mount that has tilt and swivel adjustments (example).

That said, to me it seems a bit criminal to attach a TV to those beams, so I'd probably get:
  • a nice TV/audio rack (example) and just sit the TV on top of it; or
  • a TV stand/console (example) and add a free-standing, adjustable TV mount on top (example).

Oak beams should have no trouble supporting the weight of a 65" TV + mount.

If all you want is to attach your TV to those beams, it's good. If you're looking for any sort of adjustment flexibility (e.g., swivel or tilt), it's not good enough.
I think this is the best and strongest option for the beams so that the TV stands as close possible to the beams and does not move or tilt
I would not deface the beams, as they are the focal point of the room. Instead, get a piece of furniture to place the TV on. If you want that "floating" look, then add one of these (or similar):

I don't think mounting the TV will be a problem.
The issue is wiring.. :(

How are those beams secured? It's hard to tell in the photo, but it doesn't look like they penetrate the ceiling drywall or flooring. That would be my question before hanging something as heavy as a TV from them.
these are not my wooden beams, I'm just giving an example of what they will look like. I'm most interested in whether quality beams can withstand the weight of a TV?

Oh ok, then yes. Most people are securing their TV mounts to 2x4 studs. Mine is supporting a 100 lb 85" TV with no problem. Centering the mounting bolts in the wood to get the most bite is the important part.
