The plv-60 has a D-15 connector that matches the monitor connector of a pc. The plv-60 has several automatic pc modes e.g. 1024x768. These generally fill the center of the screen with black bars on the side.
Just takes a normal monitor cable. This forum had a long thread on using cat-5e (shielded ethernet) cable for long runs (40 feet) from source to projector.
As for what input to use, RGB and component are considered better than s-video which is better than composite.
