Ripping DVDs with subs...help

I have been ripping some of my DVDs to mpgs to use with my XBOX360 via MCE. We are moving soon, and most of my DVDs will be going into storage. This seems to be the best way to be able to still watch some of them.

Does anyone know how I can rip a movie but keep the subs if they need them? For instance I tried ripping Star Wars and it looked great but didn't have the subs for the alien languages. Same thing when I ripped Black Hawk Down. Anyone have any ideas?

I only want to keep the subs that are forced. I also need to keep them in a format that WMP will play natively (mpg or wmv).

If you rip VOBs with DVD decryptor, you can choose which video/audio/subtitle tracks to rip. Not sure about playback; I imagine for most MPGs you have to "burn in" the subtitles to the actual video. AutoGK can do this, but it only encodes DivX and XviD.
