Interesting. I had the same thing happen to me shortly after my ReplayTV 2020 (not Showstopper) received the upgrade. The UI locked up during a delete requiring a reboot. Since then, I have not experienced any lockups, but then again, maybe I haven't doen the exact same thing as I did before.
Overall, I have found v3.0 to be very stable!
