My parents just bought a Hitachi v500 LCD TV.

They are looking for a decent HT system. I told them to stay away from HTiB.

With a budget of around a grand or less (they don't need a great system) any suggestions?

So far I am thinking the Panny XR45 or Onkyo SR601 (would like a receiver with two zones - my parents may add outside speakers for their deck). Both are in the $300-$400 range.

As for DVD player, I have decided on the Samsung HD-931 or the Panny RP82 (if I can find one) or xp30 or 50. I would prefer a DVD player with the Sage/Farajouda chip. I will just hook their 5 disc Sony CD player to the receiver as well.

Speakers is where I am at a loss. I would prefer just to buy a 5.1 or 6.1 speaker set and not mix and match. So far I have heard decent things about the JBL SCS160SI or one of the Yamaha systems.

Anyone have any suggestions on how to build a decent system for about a grand?

Small Denon receiver, Panny DVD (or the new cheap Sony), Paradigm speakers. You probably will need to skip the sub or the center (I'd skip the center) but this would be a great bang for the buck system.
