Anyone have any idea how to do this?

I'm using clips and channels for the ceiling and soffit.

If the pole is attached to the I Beam and the I Beam is attached to the framing, how do I decouple the wood framing around the pole so I can attach drywall to it?

use your clips and channel on the ceiling and soffit and drywall those leaving a slight gap around the pole. After they are drywalled build a frame around the pole and connect it only to the decoupled soffit, hitting a channel hopefully. as long as the frame doesn't touch the pole it will be decoupled.

That sounds like it could work. I imagine I would then need to just secure it straight into the concrete floor.
You could put a rubber mat under the framing if you want.
