It's taken us about a month to construct and get us to the point we're at now. I'm the GC.
What you don't see in these photos is the back of the room, which opens up and adds an additional 300sq.ft. I'll post some pics of it as well once we get all the junk out of the way. Back of the room has lots of custom cabinets, with a bar area housing the fridge, microwave, etc. This room is closed off from the rest of the house.
It's been a fairly easy build for us. The only obstacles we've had to deal with is the poor craftsmanship of the initial home builder. The walls were not plumb (I think they were all drunk when they did their work), which drives my cabinet and trim guys bonkers. The electrical and lighting couldn't have been laid out any nicer for us, though. But we did bring in 4 additional 20amp circuits to supply adequate power to the room. The lighting, fridge, microwave, A/V components all received their own circuit to eliminate any line noise as well as not having to worry about overloading and tripping a breaker.

You are exactly on point with your suggestion. We wrestled with that idea, but in the end we opted to go in-cabinet within the room. The front wall of cabinets is 14' wide, so we had plenty of room even with the giant Triad Gold LCR's and dual 15" subs. See photo.
We can always cut-in an AV cabinet if for some reason it doesn't work out, though.
