Can you adjust the primary colors, Gama and grayscale in V10 series through its service menu?

Gamma-yes (selectable in user menu)

Grayscale-yes

Also note that even though there are Gamma settings in the User Menu, you have to use a 0%-10% ramp pattern to check that the Gamma setting you decide to use doesn't crush any of these dark steps... Panasonic has this issue with some regularity. So just because the control exists, doesn't mean it is useful.
