I know it make a smoother picture with it on like sport or tv shows.

I like turning it off in movies for the movie feel.

I currently have the sony its called motionflow, so im guessing with it low means 120hz, high 240hz and what about off, does that mean im only getting 60hz?

So what good is higher hz good for?

is it just preference?

A 120Hz LCD always refreshes the screen at 120Hz. You can set it up so that it refreshes each screen twice and emulates a 60HZ TV.

However, a better option for you is probably to insure that it displays each frame of movie(24fps) content 5 times and therfore eliminates 3:2 pulldown Judder when converting 24fps content to 60fps content since 5x24=120.
