Not sure about the variety of commercially available products -
IMHO - the only thing that is worthwhile to go under carpet with is flat speaker cables that are designed with this in mind -
AC lines (Power) should not be run under carpet, and much of the computer and other interconnects are too delicate.
Pretty much, if you hide the wires to the projector and speakers - that will take care of the worst of it -
that is an additional reason to ceiling mount a PJ, it's usually easier to conceal the wiring.
you're not supposed to bundle the various wires together because of potential interference, although you can probably do so and by trial and error solve any interference. If you want to try bundling, just use black twist ties, nip off the ends and it will look pretty nice - try to keep AC lines away from low signal lines (interconnects)
Hopefully, the bulk of interconnects will pretty much be hidden by your rack/equipment or can be concealed with cabinetry.
Hardest thing is to do well is conceal the lines to the projector if you can't get overhead access.
I'm probably not the best person to respond to this _big grin_, I ran the projector wires in the attic, the rear speaker wires under in the crawl space and just ignore the rest, trying to keep them somewhat orderly.
