I've got a Onkyo 506 and HDMI outs from my HD cable and DVD, why am I still required to hook up the audio outs from these components for my surround speakers? I know my receiver is entry level, so will it just not process audio from the HDMI in, or is that just the way it is?

You bought an entry level receiver that is designed not to process any audio received via an HDMI connection. To get that feature, companies require more of your $$.
