Like the title of the thread states… if you could only buy ONE reference Blu Ray Concert DVD to show off your set-up, what would it be?

Porcupine Tree Anesthetize
Incredible surround mix, good audio quality and great music.

to show-off I often find myself playing the opening track on Blue Man Group: How to Be a Megastar Live! . It is a cheap way to the wows.
as far as good live concerts that I personally enjoyed lately I'd mention the following two:
Radiohead's THE KING OF LIMBS FROM THE BASEMENT
and
Lou Reed's Berlin

Chris Botti "In Boston" is absolutely reference. It's in Dolby TrueHD 7.1 at 96khz. There is a quartet verson of Sting singing "Fragile" in the behind the scenes take that is pure awesomeness! Botti's other blueray is just as good with Sting's "Message in a Bottle" which stands out.
